Beef Barbacoa
Tender, slow-cooked, and packed with deep, savory flavor, beef barbacoa is a rich and satisfying dish that’s perfect for sharing. Ingredients
1.4 kilograms Beef Chuck Roast, cut into 6 – 8 chunks
Salt and pepper, to taste
2 tablespoons Vegetable Oil
1/2 cup Beef Broth
1/4 cup Apple Cider Vinegar
1/4 cup Lime Juice, fresh
2 Chipotle Peppers in adobo sauce, chopped
5 cloves Garlic, chopped or minced
2 teaspoons Cumin, ground
1 tablespoon, Oregano
1/4 teaspoon Cloves, ground
3 Bay Leaves
Instructions
Season the meat with the salt and pepper, and brown it in the oil over medium-high heat. Transfer to the slow cooker.
Mix the second group of ingredients and pour over the beef.
Add the bay leaves.
*Do not put a towel under the lid, or the meat will be dry.
Cook on low for 8 – 10 hours, until fork tender; OR o high for 4 – 6 hours.
Discard the bay leaves and shred the meat with 2 forks.
Return the meat to the slow cooker to marinate in the sauce for at least 10 minutes.
