Butter Pecan Muffins
These butter pecan muffins are rich, tender, and filled with warm, buttery flavor in every bite. Toasted pecans add a soft crunch and deep nutty richness that makes them extra satisfying. Easy to make and perfect for sharing, these muffins are a cozy favorite for breakfast, brunch, or an afternoon treat.
Ingredients
2 cups Flour
1 tablespoon Baking Powder
1/2 teaspoon Salt
1/4 cup Butter, melted
1 cup Brown Sugar, packed
2 Eggs
2 teaspoons Vanilla
1 cup Sour Cream or Plain Yogurt, full fat
1/2 cup Pecans, chopped*
1/2 cup Skor or Toffee bits*
1/2 cup Butterscotch Chipits (optional), chopped*
*put aside 2 tablespoons of each mixed together to add to the streusel topping
Streusel Topping:
1/4 cup Brown Sugar, packed
1/4 cup Flour
2 tablespoons Butter, softened
Blend with a fork and add in the reserved pecan mixture.
Instructions
Makes: about 5 jumbo muffins.
Mix the first 3 ingredients and set aside.
Whisk the next 4 ingredients, then whisk in the yogurt.
Stir the dry bowl into the wet with a spatula until almost combined.
Stir in the pecans, Skor, and Chipits lightly.
Ideally, cover and let rest for an hour, or overnight in frig.
Fill each greased cup to heaping and sprinkle with streusel.
Bake at 350F for 25 to 30 minutes for jumbo muffins.
