Chocolate Cake – Vegan and Gluten Free

Ingredients
Cake:
2 cups Gluten Free Flour
1 1/3 cups Sugar
1/2 cup Cocoa Powder
1 pinch of Salt
3/4 teaspoon Xanthan Gum
2 teaspoons Baking Powder
2 teaspoons Baking Soda
1 cup Oil
2 cups Non-dairy Milk
Frosting:
2 3/4 cups Icing Sugar
6 tablespoons* dark Cocoa Powder
6 tablespoons* Vegan Butter
~5 tablespoons Non-Dairy Milk
1 teaspoon Vanilla
Instructions
Cake:
Grease 2 – 6 inch round pans or
1 - 8 inch square pan and line bottoms with parchment paper.
Mix the dry ingredients together and set aside.
Combine the oil and milk, and mix into the dry until smooth.
Divide evenly between the 2 - 6” pans or all in the 1 - 8” pan.
Bake at 355F/180C for 40 minutes.
Frosting:
Sift icing sugar and cocoa powder together, set aside.
Cream the butter until smooth.
Alternately, gradually beat in sugar and milk.
Beat in vanilla.
Beat until light and fluffy.
*NOTE: 6 tablespoons = 1/3 cup + 2 teaspoons
