Cranberry Loaf

This cranberry loaf is tender, flavorful, and bursting with bright pops of cranberry in every bite. Perfectly balanced between sweet and tart, it’s moist, comforting, and beautifully simple. Easy to make and lovely to share, this loaf is perfect for cozy mornings, afternoon treats, or special gatherings.

Cranberry Loaf

Ingredients

2 cups Flour

3/4 cup Sugar

1 1/2 teaspoons Baking Powder

1/2 teaspoon Baking Soda

1 teaspoon Salt


1/4 cup Margarine or Butter

1 Egg (well beaten)

3/4 cup Orange Juice

1/2 cup Walnuts

1-2 cups Cranberries (coarsely chopped)

Instructions

Mix the first 5 ingredients together.

Cut in the butter.

Mix together the egg and orange juice.

Add the wet to the dry and stir together.

Add the walnuts and the cranberries last.


Muffins :

Bake at 400F for 20 minutes.

Loaf :

Bake at 350F for 1 hour.

* 1 bag of cranberries yields about 3 1/2 cups chopped.
