Double Chocolate Zucchini Bread
Rich, moist, and packed with deep chocolate flavor, this double chocolate zucchini bread is a decadent twist on a classic. Ingredients
Makes: 1 Loaf
1 cup Flour
1/2 cup Cocoa Powder
1 teaspoon Baking Soda
1/4 teaspoon Baking Powder
1/4 teaspoon Salt
1/2 teaspoon Cinnamon (optional)
1/2 cup Oil
1/2 cup Sugar
1/2 cup Brown Sugar
1 teaspoon Vanilla
2 Eggs
1 1/2 cups Zucchini, shredded
1/2 – 3/4 cup Chocolate Chips
Instructions
Sift together the first 6 ingredients and set aside.
Combine the next 4 ingredients, and then mix in the eggs and zucchini.
Mix the dry ingredients in the wet until just moistened, and then fold in the chocolate chips.
Bake in a greased and floured/parchment papered loaf pan at 350F for 55-60 minutes.
Turn out on a wire rack after 10 minutes
