Gluten-Free Oatmeal Blueberry Pancakes

Ingredients
1 1/2 cups Quick Oats
1/2 cup Oats
1 1/2 teaspoons Cinnamon
1/2 teaspoon Nutmeg
1/2 teaspoon Baking Powder
1/2 teaspoon Salt
1/3 cup Honey (or Sugar)
4 Egg Whites (or 2 Eggs)
1/4 cup Milk
1/4 cup Coconut Oil, melted
1 teaspoon Vanilla
1 cup Blueberries, fresh or frozen
Instructions
Mix the dry ingredients and set aside.
Combine the next 5 ingredients.
Stir the dry into the wet.
Heat a lightly oiled fry pan over medium-high heat.
Drop large spoonfuls of batter onto pan and top with blueberries.
Cook until bubbles form and the edges are dry, around 2 to 3 minutes.
Flip and cook until browned on the other side.
