Lemon Loaf

This lemon loaf is bright, tender, and full of fresh citrus flavor in every slice. Perfectly moist with just the right balance of sweetness and tang, it’s refreshing and comforting at the same time. Ingredients
1 1/2 cups Flour
2 teaspoons Baking Powder
1/2 teaspoon Salt
1/4 cup Poppy Seeds (optional)
3 Eggs
1 cup Sugar
1 cup Sour Cream or Yogurt
1/2 cup Oil
2 tablespoons Lemon Zest
2 tablespoons Lemon Extract
Instructions
Mix the first group of ingredients and set aside.
Whisk together the next 3 ingredients well.
Continue whisking while drizzling in the oil.
Whisk in the zest and extract.
Add the dry ingredients and stir just until combined.
Pour into a greased and floured loaf pan
Bake at 350F/175C for 50 – 55 minutes.
May need to tent pan with foil during the last 10 minutes of baking)
Cool for 30 minutes before turning out onto rack.
Glaze:
2/3 cup Icing Sugar,
2 tablespoons Lemon Juice
Mix until smooth and pour over cooled loaf.
