Maple-Glazed Doughnut Bundt Cake

Ingredients

Cake:

3 cups Flour

2 teaspoons Baking Powder

1/4 teaspoon Baking Soda

1/2 teaspoon Salt

1 cup Butter

1 cup Sugar

4 Egg Yolks

1/4 cup Sour Cream

1 1/2 teaspoons Maple Extract

1 cup Buttermilk

4 Egg Whites

1/2 cup Sugar

3 tablespoons Maple Syrup

1 tablespoon Water, warm

Glaze:

3 tablespoons Maple Syrup,

1 teaspoon Maple Extract,

1 cup Icing Sugar.

Instructions

Cake:

Mix the first 4 ingredients and set aside.

Cream butter and sugar until fluffy.

Beat in 1 egg yolk at a time.

Mix in the sour cream and maple extract.

To this mixture, alternate adding the flour mixture and the buttermilk, starting and ending with the flour (3:2).

Whip egg whites until at soft peaks and then add all the sugar 1 tablespoon at a time, until firm glossy peaks form. Fold 1/3 of this into the cake batter, then the remainder.

Bake in a greased and floured 10-inch bundt pan at 350F/176C for 40-50 minutes.

Cool 20 minutes before loosening, turning out onto a rack, and brushing all over with the syrup/water mixture.

Glaze:

Mix together and drizzle over cool cake.
