Peace River Muffins (Vegan/GF)

Ingredients
1 cup Gluten Free Flour
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
2 teaspoons Ginger
1 teaspoon Cinnamon
3/4 cup Steel Cut Oats
1/4 cup Flax Seed
1 cup Non-dairy Milk with 1 tablespoon Vinegar
1 teaspoon Salt
1/4 cup Apple Sauce
1/4 cup Oil
1/3 cup Monkfruit Sweetener
1 cup Raisins
2 tablespoons Molasses (optional but better)
Instructions
Mix together the first 5 ingredients and set aside.
Mix together the last group of ingredients and set aside for half an hour.
Mix dry into the wet, stirring only to moisten.
Bake at 400F for 20 minutes.
