Potato Lentil Stew

Warm, nourishing, and completely vegan, this potato lentil stew is the kind of meal that satisfies on every level. Tender potatoes and hearty lentils simmer together into a rich, flavorful dish that’s both comforting and filling. Ingredients
1 - 1 1/2 tablespoons Oil
1 Onion, coarsely chopped
2 large Carrot, peeled and chopped
3 Garlic Cloves, peeled and chopped
1 1/2 tablespoons Tomato Paste
1 tablespoon Soya Sauce, low sodium
1 cup Lentils, well rinsed
3 medium Potatoes, peeled and cubed
2 cups Chickpeas (optional)
Other optional vegetables: corn, peas, celery, cabbage
3/4 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Thyme
3/4 teaspoon Garlic Powder
3/4 teaspoon Paprika
4 cups Vegetable Broth, low sodium (or non-vegan Chicken broth)
1 cup Coconut Milk, or other milk
Instructions
In a soup pot, heat the oil and saute the onions and carrots for about 3 minutes.
Stir in the garlic, and cook for another 2 minutes.
Stir in the tomato paste and soya sauce, and cook for another minute.
Stir in the lentils, potatoes, and chickpeas (plus other optionals), followed by the spices and cook for a minute.
Stir in the broth and bring to a boil. Put on the lid, and simmer on a low heat for 20 minutes.
Stir in the coconut milk and simmer for another 3-5 minutes.
