Pumpkin Loaf

Ingredients
3 cups Flour
1/2 teaspoon Salt
3/4 teaspoon Baking Powder
1 1/2 teaspoons Baking Soda
4 teaspoons Cinnamon
1 tablespoon Nutmeg
2 teaspoons Ginger
2 teaspoons Cloves (Optional)
1 cup Butter (or substitute half for Apple Sauce)
2 cups Sugar
3 Eggs
2 2/3 cups Pumpkin
1 1/2 cups Raisins
1 1/2 cups Walnuts (Optional)
Instructions
Makes: 2 Loaves
Sift together the first 8 ingredients and set aside.
Cream the butter and sugar.
Add one egg at a time. Beat until light and fluffy.
Beat in pumpkin.
On low speed mix in the dry ingredients.
Stir in raisins and nuts.
Grease and flour, or parchment paper the pans.
Bake at 325F for 75 minutes.
Cool 10 minutes and then turn out on a rack to finish.
